Recipe is for 3lbs of Potatoes
1 1/2 tablespoons vegetable oil
Rub on potato before baking. Bake for 400 degrees for 45-60 minutes.
1/4 cup butter
Melt in pan and saute 1/2 cup green onion
1/2 cup whipping cream
1/2 cup sour cream
1 teaspoon salt
1/2 teaspoon white pepper
1 cup cheddar cheese
Beat potato, onion, butter, cream . . . everything except the cheese until it is light and fluffy. Stir in cheese by hand.
Drizzle 1/4 cup butter over potatoes and sprinkle with paprika.
Bake 350 degrees for 20-30 minutes.
These can be made a day ahead of time and baked the final time right before serving!
