2 cloves garlic
1 tablespoon extra virgin olive oil
1 teaspoon balsamic vinegar
8 basil leaves, chopped
sea salt and fresh ground pepper to taste
1 baguette french bread
1/4 cup olive oil
Prepare tomatoes by soaking them for 1 minute in boiled water. This will allow the skins to be easily removed. Remove the stems and seeds, and dice.
Combine tomatoes, garlic, oil, vinegar, basil, and salt and pepper. Set aside.
Slice baguette diagonally into 1/2 inch thick slices. Baste with oil, place oil side down on baking sheet and toast at 450 degrees for 5-6 minutes.
Remove from oven and top with tomato mixture before serving.
