Sweet and Sour Chicken

1 can pineapple chunks
1/3 cup vinegar
1/4 cut brown sugar
2 tablespoons cornstarch
1 tablespoon soy sauce
1/2 teaspoon salt
2 1/2 cups cooked chicken (can use turkey or pork), diced
3/4 cup sliced green peppers
1/4 cup sliced onion

Drain pineapple, reserving 1 cup juice. Combine reserved juice, vinegar, brown sugar, soy sauce, and salt. Cook over low heat, when warm remove 1/2 and stir in cornstarch until dissolved and smooth, then put back with rest of mixture and heat until thickened and clear, stirring often.
When the mixture is clear, add the pepper, chicken, and onion stirring them in and allowing them to heat.
Just before serving stir in the pineapple chunks. Serve over sticky or whole grain rice.
